Potatoes

Potatoes

Whether mashed, baked or roasted, people often consider potatoes to be a comfort food. The world's favourite root vegetable and number one crop, this important food staple is available year-round as they are harvested somewhere every month of the year. The potato is a member of the nightshade family, like tomatoes and aubgerines; it originated in South America and has been grown in Europe since the 16th century.

Country of Origin: British Isles

Nutritional Information: Jersey Royal Potatoes are famous for being the UK's favourite new potato and are renowned for their unique taste, flavour, and delicate skins. However, not only do Jersey Royal Potatoes taste fantastic, they are also incredibly nutritious.

Some Interesting Facts about the Jersey Royal: In 1880 a Jersey farmer named Hugh de la Haye discovered the Jersey Royal by chance. He planted two huge potatoes that he had been given, one of which had 15 'eyes' from which new plants sprout. He cut this particular potato into 15 pieces and planted them on a steep south-facing slope overlooking the sea. The following spring, they produced a large and early crop. Most of the new crop produced round tubers, but one plant produced nothing but uniquely kidney shaped potatoes. The Jersey Royal was born.

Due to the manner of it's discovery and it's superior flavour, it was christened the Jersey Royal Fluke. It was carefully nurtured and developed within the island to produce the later stocks of Jersey Royals. Most of the old traditions are still employed with the crop being planted carefully by hand.

Nutrional Information: Potatoes are very nutritious, containing more potassium than a banana and high in vitamin C. Boiled or baked with the skin on will provide a multitude of nutrients, plus healthy dietary fibre. The potato is also a healthy source of natural starch and can even protect us from things like colon cancer because of the cleansing action of the resistant starch, which passes through the digestive tract and into the colon. Potatoes contain a vast array of important nutrients, including: vitamin C, B1, B3, B6, iron, phosphorous, magnesium, chromium, potassium and antioxidents. Overall, baking, while destroying much of the vitamin C, probably preserves more of the overall vitamin and mineral content than any other method.

Marfona has an almost ‘buttery’ flavour and a smooth waxy texture making it a very popular variety for baking. It has a white to yellow skin and light yellow flesh.

Uses: Baking, mashing, boiling.
