Corn on the Cob with Chilli & Garlic Butter

Ingredients (Serves 4):

4 corn on the cob, husks on

100g salted butter

1 garlic clove, finely diced

½ red chilli, finely diced

1 lime, cut into wedges

salt & pepper

Method:

1. Put the cobs onto a plate and place in the microwave for 4 minutes for 1, 6 minutes for 2, 7 minutes for 3 and 8 minutes for 4.

2. In a small bowl, add the butter, chilli, garlic and a few turns of pepper.

3. Remove the corn from the microwave and leave to rest for 1 minute. Afterwards, peel back the husk but do not remove completely. Smother in the butter and serve with a wedge of lime to garnish.

Microwaving the corn within its husk traps the moisture inside the cob and steams the corn to perfection. This method helps to retain the moisture, flavour and it halves the cooking time compared to the conventional roasting or boiling methods. The healthiest fast food you could possibly have. Also, when peeling back the husk, bunch it together to create a handle to save your fingers from burning.
